When the weather fills you with dread about making dinner, this chopped salad is a lifesaver. Mine had imported tuna in olive oil and garbanzo beans as a protein, tomatoes, avocado, cucumbers, red roasted peppers, artichoke hearts, and fresh mozzarella. Chopped salad, because you can&#8217;t serve popsicles for dinner every night!<!--more--><\/p>\n<ul>\n<li>1 &#8211; 5 oz. can imported tuna in oil<\/li>\n<li>1 cup garbanzo beans, rinsed and drained<\/li>\n<li>1 cup cucumber, peeled, quartered lengthwise, seeds removed<\/li>\n<li>1 red roasted pepper, skin and seeds removed<\/li>\n<li>1 large tomato, chopped<\/li>\n<li>1 avocado, chopped<\/li>\n<li>1 small red onion, finely chopped<\/li>\n<li>6 canned artichoke hearts, chopped<\/li>\n<li>1 cup fresh mozzarella, cut into bite sized pieces<\/li>\n<li>1\/4 teaspoon crushed red pepper<\/li>\n<li>1\/4 teaspoon oregano<\/li>\n<li>juice of half a lemon<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<ol>\n<li><\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Last week, we had quite a few days of 90+ degree days around these parts.
