This one layer wonder is perfect with a cup of coffee for breakfast, or as a snack cake anytime of day! <!--more--><\/p>\n<ul>\n<li>7 tablespoons butter, melted and cooled<\/li>\n<li>2 cups + 1 tablespoon flour<\/li>\n<li>2 teaspoons baking powder<\/li>\n<li>pinch salt<\/li>\n<li>3 large eggs + 1 egg yolk<\/li>\n<li>1 3\/4 cups confectioners sugar<\/li>\n<li>2\/3 cup heavy cream<\/li>\n<li>zest of one lemon<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>1 tablespoon lemon juice<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 350\u00ba, grease and flour a 9&#8243; round cake pan.<\/li>\n<li>In a medium bowl, whisk flour, baking powder, and salt together. In a large bowl, beat eggs, sugar on medium speed until light and fluffy.<\/li>\n<li>Using a spatula gently fold in flour mixture alternating with the heavy cream until the mixture is well combined. Then fold in the butter, lemon zest, vanilla, and lemon juice.<\/li>\n<li>For into prepared pan and bake for 35 to 40 minutes.
