This recipe is pretty flexible, I had mushrooms and some fresh spinach which I tossed in, although I imagine that any leftover veggies you have on hand like broccoli, zucchini, or asparagus would be delicious additions too. It&#8217;s a &#8220;clean out your fridge&#8221; kind of dish!<!--more--><\/p>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>1 tablespoon butter<\/li>\n<li>1 pound new potatoes, thinly sliced<\/li>\n<li>salt and pepper, to taste<\/li>\n<li>14 oz. turkey kielbasa, sliced into 1\/4&#8243; rounds<\/li>\n<li>1 small yellow onion, diced<\/li>\n<li>2 bell peppers, sliced<\/li>\n<\/ul>\n<ol>\n<li>In a large skillet, heat the olive oil and butter on medium-high heat &#8211; add the potatoes and season with salt and pepper. Cook on one side for 5 to 6 minutes, and turn oven and cook for another 5, until they&#8217;re golden brown. Remove from pan using a slotted spoon.<\/li>\n<li>Add the kielbasa, and cook for 2 to 3 minutes on each side until lightly browned. Add the onions and peppers (and any additional vegetables if you choose), and saut\u00e9 until the onions are translucent, and the peppers are tender.<\/li>\n<li>Add the potatoes back in, stir for a minute or two.
