Those plans were scrapped when I discovered that the temperatures would be close to triple digits. Plan B &#8211; muffins, quick to mix up, and a mere 20 minutes in the oven. Sold! <!--more--><\/p>\n<ul>\n<li>\u00a01\/2 cups flour<\/li>\n<li>1\/2 teaspoon baking soda<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1\/2 teaspoon cinnamon<\/li>\n<li>1\/2 cup granulated sugar<\/li>\n<li>1\/2 cup light brown sugar<\/li>\n<li>2 large eggs<\/li>\n<li>1\/2 cup vegetable oil<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>1 1\/2 cups peaches, peeled and chopped<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 350\u00ba, line a muffin pan with papers.<\/li>\n<li>In a small bowl, whisk flour, baking soda, salt, and cinnamon. Set aside.<\/li>\n<li>In a large bowl, blend sugars, eggs, oil, and vanilla with an electric mixer. Add flour mixture until just combined. Fold in peaches.<\/li>\n<li>Divide batter evenly among the muffin cups, bake for 20 to 22 minutes.
