The blueberries in the market are plump and juicy, it almost makes the ungodly heat bearable! <!--more--><\/p>\n<ul>\n<li>1 1\/2 cups flour<\/li>\n<li>2 teaspoons baking powder<\/li>\n<li>1\/2 teaspoon kosher salt<\/li>\n<li>1 cup yogurt<\/li>\n<li>1 cup sugar<\/li>\n<li>3 large eggs<\/li>\n<li>2 teaspoons lemon zest<\/li>\n<li>1\/2 teaspoon vanilla extract<\/li>\n<li>1\/2 cup vegetable oil<\/li>\n<li>1 cup blueberries<\/li>\n<\/ul>\n<p>Glaze &#8211;<\/p>\n<ul>\n<li>1\/2 cup confectioners sugar<\/li>\n<li>1 tablespoon lemon juice<\/li>\n<li>1\/2 teaspoon lemon zest<\/li>\n<\/ul>\n<ol>\n<li>In a small bowl, whisk flour, baking powder, and salt. Set aside. Spray a loaf pan with baking spray and line it with parchment paper. Preheat oven to 350\u00ba.<\/li>\n<li>In a large bowl, blend yogurt, sugar, eggs, lemon zest, vanilla, and oil with an electric mixer.<\/li>\n<li>Add the flour mixture on low speed until incorporated. Fold in the blueberries tossed in a tablespoon of flour.<\/li>\n<li>Bake for 50 to 60 minutes.
