I didn&#8217;t have time to make a pie, so I threw together this simple cake made with yogurt and topped with fruit. It was perfect with coffee this morning! <!--more--><\/p>\n<ul>\n<li>1 1\/2 cups flour<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>1\/2 teaspoon baking soda<\/li>\n<li>2 oz. butter, softened<\/li>\n<li>1 cup granulated sugar<\/li>\n<li>2 large eggs<\/li>\n<li>1\/2 teaspoon vanilla extract<\/li>\n<li>1\/2 cup yogurt<\/li>\n<li>2-3 peaches, sliced<\/li>\n<li>3\/4 cup blueberries<\/li>\n<li>1 teaspoon granulated sugar<\/li>\n<\/ul>\n<ol>\n<li>Grease a 9&#8243; x 3&#8243; springform pan. Preheat oven to 350\u00ba.<\/li>\n<li>In a small bowl, whisk flour, baking powder, and baking soda, set aside.<\/li>\n<li>In a large bowl, beat butter, sugar, eggs, vanilla, and yogurt until smooth. Add flour mixture until just combined, and pour batter into pan.<\/li>\n<li>Top with sliced peaches and blueberries. Sprinkle remaining teaspoon of sugar on top and bake for 40 to 60 minutes. Test with a toothpick.
