It was a hit, and Italian neighbor approved! <!--more--><\/p>\n<p>For the meatballs:<\/p>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>1\/2 pound ground beef<\/li>\n<li>1\/2 pound ground pork<\/li>\n<li>1 large egg, beaten<\/li>\n<li>1\/2 cup Italian breadcrumbs<\/li>\n<li>1\/4 cup finely grated parmesan cheese<\/li>\n<li>2 cloves garlic, finely minced<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p>For the soup:<\/p>\n<ul>\n<li>1 1\/4 cups carrots, diced<\/li>\n<li>1 cup yellow onion, diced<\/li>\n<li>3\/4 cup celery, diced<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>8 cups chicken broth<\/li>\n<li>2 teaspoons Italian seasoning<\/li>\n<li>salt and pepper<\/li>\n<li>3\/4 cup acini de pepe pasta, uncooked<\/li>\n<li>8 ounces fresh spinach, washed and sliced into ribbons<\/li>\n<\/ul>\n<ol>\n<li>Combine the meatball ingredients, don&#8217;t overwork or the meatballs will be tough. Roll the meat into 1 inch balls, heat the olive oil in a Dutch oven and brown the meatballs for 2 to 3 minutes. Remove and set aside.<\/li>\n<li>Add the carrots, celery, and onions to the pot and cook for 5 minutes, and the garlic and saut\u00e9 for a minute.<\/li>\n<li>Pour in the chicken broth, add the Italian seasoning, salt and pepper and bring to a boil.<\/li>\n<li>Reduce to medium heat, and add the meatballs and pasta.
