With the exception of a red onion, a red pepper, and a jalape\u00f1o pepper, the majority of ingredients such as black beans, rice, and tomato paste are right in your cupboard. <!--more--><\/p>\n<ul>\n<li>1\/2 cup red onion, diced<\/li>\n<li>1 red pepper, diced<\/li>\n<li>1 jalape\u00f1o, minced<\/li>\n<li>1 cup dry long grain rice<\/li>\n<li>2 tablespoons chili powder<\/li>\n<li>1 teaspoon garlic powder<\/li>\n<li>1 teaspoon cumin<\/li>\n<li>1\/2 teaspoon oregano<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>4 cups chicken broth<\/li>\n<li>3 tablespoons tomato paste<\/li>\n<li>1 cup corn<\/li>\n<li>1 &#8211; 15 oz. can black beans, drained and rinsed<\/li>\n<li>5 cups chicken, shredded<\/li>\n<li>1 tablespoon olive oil<\/li>\n<li>2 cups shredded cheddar cheese<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 400\u00ba.<\/li>\n<li>In a 9&#8243; x 13&#8243; pan, mix the onion, pepper, jalape\u00f1o, rice, chili powder, garlic powder, cumin, oregano, and salt.<\/li>\n<li>Whisk the broth and tomato paste together, and pour over the rice mixture.<\/li>\n<li>Stir in the corn, black beans, and olive oil.
