Normally, I tend to avoid what I call &#8220;single-use things&#8221; such as egg slicers and avocado cubers in my kitchen since it&#8217;s the size of a postage stamp and storage is severely limited. However, I must confess that I pitted a pound of cherries in less than ten minutes &#8211; it&#8217;s a game changer!<\/p>\n<p>This is a one pan wonder &#8211; a moist cherry cake made with ricotta and lemon zest. It&#8217;s delicious and takes no time to make, that&#8217;s <em><strong>IF<\/strong><\/em> you&#8217;re lucky enough to own a cherry pitter! <!--more--><\/p>\n<div class=\"wprm-recipe-ingredients-container\" data-slot-rendered-recipe=\"true\">\n<div class=\"wprm-recipe-ingredient-group\">\n<ul class=\"wprm-recipe-ingredients\">\n<li class=\"wprm-recipe-ingredient wprm-list-checkbox-container\"><span class=\"wprm-recipe-ingredient-amount\">1 1\/2 cups flour<\/span><\/li>\n<li class=\"wprm-recipe-ingredient wprm-list-checkbox-container\"><span class=\"wprm-recipe-ingredient-amount\">2<\/span> <span class=\"wprm-recipe-ingredient-unit\">tsp<\/span> <span class=\"wprm-recipe-ingredient-name\">baking powder<\/span><\/li>\n<li class=\"wprm-recipe-ingredient wprm-list-checkbox-container\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span> <span class=\"wprm-recipe-ingredient-unit\">cup<\/span> <span class=\"wprm-recipe-ingredient-name\">granulated sugar<\/span><\/li>\n<li class=\"wprm-recipe-ingredient wprm-list-checkbox-container\"><span class=\"wprm-recipe-ingredient-amount\">3\/4<\/span> <span class=\"wprm-recipe-ingredient-unit\">teaspoon<\/span> <span class=\"wprm-recipe-ingredient-name\">salt<\/span><\/li>\n<li class=\"wprm-recipe-ingredient wprm-list-checkbox-container\"><span class=\"wprm-recipe-ingredient-amount\">3<\/span> large <span class=\"wprm-recipe-ingredient-name\">eggs<\/span><\/li>\n<li class=\"wprm-recipe-ingredient wprm-list-checkbox-container\"><span class=\"wprm-recipe-ingredient-amount\">1 1\/4<\/span> <span class=\"wprm-recipe-ingredient-unit\">cups<\/span> <span class=\"wprm-recipe-ingredient-name\">ricotta<\/span><\/li>\n<li>1 teaspoon lemon zest<\/li>\n<li class=\"wprm-recipe-ingredient wprm-list-checkbox-container\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span> <span class=\"wprm-recipe-ingredient-unit\">tsp<\/span> <span class=\"wprm-recipe-ingredient-name\">vanilla extract<\/span><\/li>\n<li class=\"wprm-recipe-ingredient wprm-list-checkbox-container\"><span class=\"wprm-recipe-ingredient-amount\">1\/2<\/span> <span class=\"wprm-recipe-ingredient-unit\">cup<\/span><span class=\"wprm-recipe-ingredient-name\"> butter,<\/span> <span class=\"wprm-recipe-ingredient-notes\">melted<\/span><\/li>\n<li class=\"wprm-recipe-ingredient wprm-list-checkbox-container\"><span class=\"wprm-recipe-ingredient-amount\">2<\/span> <span class=\"wprm-recipe-ingredient-unit\">cups<\/span> <span class=\"wprm-recipe-ingredient-name\">cherries<\/span>\u00a0<span class=\"wprm-recipe-ingredient-notes\">pitted and halved, divided<\/span><\/li>\n<li class=\"wprm-recipe-ingredient wprm-list-checkbox-container\"><span class=\"wprm-recipe-ingredient-name\">confectioners sugar,<\/span> <span class=\"wprm-recipe-ingredient-notes\">optional<\/span><\/li>\n<\/ul>\n<div class=\"wprm-recipe-instruction-text\">\n<ol>\n<li>Preheat oven to 350\u00b0. Line a 9\u201d cake pan with parchment paper and lightly coat with baking spray. In a small bowl, sift flour, baking powder, sugar and salt together.<\/li>\n<li>Whisk eggs, ricotta, lemon zest, and vanilla in a large bowl until smooth. Stir into dry ingredients just until blended.<\/li>\n<li>\u00a0Fold in melted butter with a rubber spatula, then add 1 cup of cherries.<\/li>\n<li>Pour batter into prepared pan and scatter remaining 1 cup cherries over top.<\/li>\n<li>Bake cake until golden brown and a toothpick inserted into the center comes out clean, about 50-60 minutes. Let cool for 20 minutes, remove from the pan and finish cooling on a wire rack.
