Although we were too stuffed after dinner, we managed to have a slice on Christmas night while watching Hitchcock&#8217;s <em>&#8220;Strangers on a Train&#8221; &#8211; <\/em>a movie I highly recommend! <!--more--><\/p>\n<div class=\"wprm-recipe-ingredient-group\">\n<h3>Pie Crust<\/h3>\n<ul class=\"wprm-recipe-ingredients\">\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">2 \u00bd<\/span> <span class=\"wprm-recipe-ingredient-unit\">cups<\/span> <span class=\"wprm-recipe-ingredient-name\">flour<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span> <span class=\"wprm-recipe-ingredient-unit\">tablespoon<\/span> <span class=\"wprm-recipe-ingredient-name\">sugar<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span> <span class=\"wprm-recipe-ingredient-unit\">teaspoon<\/span> <span class=\"wprm-recipe-ingredient-name\">salt<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span> <span class=\"wprm-recipe-ingredient-unit\">cup<\/span> <span class=\"wprm-recipe-ingredient-name\">butter<\/span> <span class=\"wprm-recipe-ingredient-notes\">very cold, cut into small cubes<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">\u00be<\/span> <span class=\"wprm-recipe-ingredient-unit\">cup<\/span> <span class=\"wprm-recipe-ingredient-name\">ice cold water<\/span><\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-ingredient-group\">\n<h3 class=\"wprm-recipe-group-name wprm-recipe-ingredient-group-name\">Apple Pear Filling<\/h3>\n<ul class=\"wprm-recipe-ingredients\">\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">3<\/span> <span class=\"wprm-recipe-ingredient-name\">medium ripe pears,<\/span> <span class=\"wprm-recipe-ingredient-notes\">peeled and thinly sliced<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">3<\/span> <span class=\"wprm-recipe-ingredient-name\">medium Granny Smith apples,<\/span> <span class=\"wprm-recipe-ingredient-notes\">peeled and thinly sliced<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">\u00be<\/span> <span class=\"wprm-recipe-ingredient-unit\">cup<\/span> granulated <span class=\"wprm-recipe-ingredient-name\">sugar<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">2 <\/span><span class=\"wprm-recipe-ingredient-unit\">tablespoons<\/span> <span class=\"wprm-recipe-ingredient-name\">corn starch <\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span> <span class=\"wprm-recipe-ingredient-unit\">teaspoon<\/span> <span class=\"wprm-recipe-ingredient-name\">lemon juice<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span> <span class=\"wprm-recipe-ingredient-unit\">teaspoon<\/span> <span class=\"wprm-recipe-ingredient-name\">ground cinnamon<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">\u00bc<\/span> <span class=\"wprm-recipe-ingredient-unit\">teaspoon<\/span> <span class=\"wprm-recipe-ingredient-name\">ground nutmeg<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">3<\/span> <span class=\"wprm-recipe-ingredient-unit\">tablespoons<\/span> <span class=\"wprm-recipe-ingredient-name\">butter<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span> large <span class=\"wprm-recipe-ingredient-name\">egg<\/span> <span class=\"wprm-recipe-ingredient-notes\">slightly beaten<\/span><\/li>\n<\/ul>\n<ol>\n<li>For the crust, mix together flour, sugar and salt in a large bowl.<\/li>\n<li>Add the cold cubed butter and cut it into the dough using a pastry cutter.<\/li>\n<li>When butter and flour are clumps the size of peas, mix in the cold water.<\/li>\n<li>Knead dough with your hands until it all comes together and there is no flour at the bottom of the bowl.<\/li>\n<li>Divide the dough into two discs and wrap in plastic wrap.<\/li>\n<li>Refrigerate dough for an hour before using. While the pie dough is chilling, make the pear apple mixture.<\/li>\n<li>In a large bowl, combine the pears, apples, sugar, corn starch, lemon juice, cinnamon, and nutmeg.<\/li>\n<li>Preheat oven to 350\u00ba. Roll out one disc of dough and ease it into a 9&#8243; pie plate, and fill with fruit. Roll out the second disc of dough and cut out the strips for the top crust. Weave the lattice, pinching it with the bottom crust to seal.<\/li>\n<li>Dot with butter, and brush on the egg wash. Place on a baking pan and bake for 60 to 65 minutes until golden brown.
