It&#8217;s the classic summer pie, and wonderful when served with a scoop of vanilla ice cream! <!--more--><\/p>\n<ul>\n<li>2 pie crusts<\/li>\n<li>4 cups strawberries, quartered<\/li>\n<li>2 cups rhubarb, cut into thin pieces<\/li>\n<li>1\/2 cup light brown sugar<\/li>\n<li>1\/2 cup granulated sugar<\/li>\n<li>1\/4 cup cornstarch<\/li>\n<li>2 teaspoons vanilla<\/li>\n<li>zest of 1 lemon<\/li>\n<li>1 tablespoon lemon juice<\/li>\n<li>2 tablespoons butter, cut into small cubes<\/li>\n<li>1 egg white, to brush on crust<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 425\u00ba. Roll out dough and ease it into the pie plate.<\/li>\n<li>In a large bowl, mix the strawberries, rhubarb, both sugars, cornstarch, vanilla, zest, lemon juice, and butter.<\/li>\n<li>Pour into pie plate, then roll out second crust cut into strips for the lattice. Brush crust with the egg white.<\/li>\n<li>Bake at 425\u00ba for 15 minutes, then lower oven to 375\u00ba for 50 to 60 minutes.
