I realized that I hadn&#8217;t make a blueberry pie this year, which I remedied yesterday morning. The blueberries were the size of marbles, and very sweet &#8211; this pie is delicious! <!--more--><\/p>\n<ul>\n<li>pie dough for 2 crusts<\/li>\n<li>6 cups blueberries<\/li>\n<li>2\/3 cup granulated sugar<\/li>\n<li>2 tablespoons cornstarch<\/li>\n<li>2 tablespoons lemon juice<\/li>\n<li>1 teaspoon grated lemon zest<\/li>\n<li>1\/4 teaspoon cinnamon<\/li>\n<li>1 tablespoon butter, cut into small pieces<\/li>\n<li>egg wash &#8211; 1 egg + 1 tablespoon water<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 425\u00ba.<\/li>\n<li>In a large bowl mix berries, sugar, cornstarch, lemon juice, lemon zest, and cinnamon.<\/li>\n<li>Roll out dough and ease into a 9&#8243; pie plate, pour in berry mixture, add the lattice. Dot with the butter, and brush on egg wash.<\/li>\n<li>Place on a baking sheet, and bake at 425\u00ba for 25 minutes, turn down oven to 375\u00ba and bake for an additional 40 minutes.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Although it&#8217;s September, I wanted to take advantage of summer produce one more time.
