I give you this Iced Lemon Loaf Cake &#8211; it packs a lemony punch and goes well with my morning coffee or an after dinner snack. <!--more--><\/p>\n<ul>\n<li>1 3\/4 cups flour<\/li>\n<li>1 cup granulated sugar<\/li>\n<li>1 1\/2 teaspoons baking powder<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>2 tablespoons lemon zest<\/li>\n<li>1\/4 cup butter, melted<\/li>\n<li>2 large eggs<\/li>\n<li>1\/4 cup vegetable oil<\/li>\n<li>1 cup sour cream<\/li>\n<li>1\/3 cup lemon juice<\/li>\n<li>1 cup confectioner&#8217;s sugar, sifted<\/li>\n<li>2 tablespoons lemon juice<\/li>\n<\/ul>\n<ol>\n<li id=\"wprm-recipe-29983-step-0-0\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Preheat the oven to 350\u00ba. Line a 9&#8243; \u00d7 5&#8243; loaf pan with parchment paper and spray the pan with nonstick spray.<\/div>\n<\/li>\n<li id=\"wprm-recipe-29983-step-0-2\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">In a medium bowl, whisk together the flour, sugar, baking powder, salt, and lemon zest.<\/div>\n<\/li>\n<li id=\"wprm-recipe-29983-step-0-3\" class=\"wprm-recipe-instruction\">In a small bowl, microwave 1\/4 cup butter until melted &#8211; set aside to cool.<\/li>\n<li>In a large bowl, beat the eggs, then add the oil, sour cream, and lemon juice &#8211; add the cooled melted butter.<\/li>\n<li>Add the dry ingredients, stirring until well combined. Pour into prepared pan and bake at 350\u00ba for 45 to 52 minutes, testing with a toothpick.
