The orange zest is used in the batter and the glaze and really adds to the flavor of the muffins, they&#8217;re delish! <!--more--><\/p>\n<ul>\n<li>1 1\/2 cups flour<\/li>\n<li>3\/4 cup granulated sugar<\/li>\n<li>1 1\/2 teaspoons baking powder<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>1\/4 cup milk, room temperature<\/li>\n<li>2 large eggs, room temperature<\/li>\n<li>6 tablespoons butter, melted<\/li>\n<li>1\/4 cup orange juice<\/li>\n<li>zest of 1 large orange or 2 medium<\/li>\n<li>1 1\/2 cups fresh cranberries<\/li>\n<\/ul>\n<p>Glaze:<\/p>\n<ul>\n<li>6 tablespoons confectioner&#8217;s sugar<\/li>\n<li>1 teaspoon orange zest<\/li>\n<li>1 1\/2 to 2 tablespoons orange juice<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 350\u00ba. Line muffins pans with 15 liners.<\/li>\n<li>In a small bowl, whisk flour, sugar, baking powder, and salt.<\/li>\n<li>In a large bowl, whisk milk, eggs, butter, orange juice, and zest until smooth.<\/li>\n<li>Stir in flour mixture until just combined, then fold in cranberries. Put 2 heaping tablespoons of batter into muffin cups. Bake for 15 to 17 minutes, testing with a toothpick. Cool on a wire rack.<\/li>\n<li>Combine ingredients for the glaze. Spoon glaze on the cooled muffins.
