A coconut cake with caramelized fresh pineapple filling, and a frosting made with coconut milk. The Boy turned it over in his head for a few days, and asked if he could have a chocolate cake with chocolate frosting instead. Done! I baked his favorite chocolate cake with sour cream and made a chocolate cream cheese frosting. I had never made the frosting before, and it was amazing! <!--more--><\/p>\n<ul>\n<li>2 &#8211; 8oz. bars of cream cheese, softened<\/li>\n<li>2 sticks of butter, softened<\/li>\n<li>2 teaspoons vanilla extract<\/li>\n<li>2 cups confectioners sugar<\/li>\n<li>2\/3 cup cocoa powder<\/li>\n<li>2 tablespoons milk<\/li>\n<\/ul>\n<ol>\n<li>In a large bowl, cream the cream cheese and butter together until well incorporated. Add the vanilla.<\/li>\n<li>Sift the confectioners sugar and cocoa powder together and add a half cup at a time to the cream cheese\/butter mixture. Add the milk to loosen up the frosting.
