Simmered with carrots, celery, and onions in \u00a0chicken stock &#8211; it was the perfect complement to our grilled cheese sandwiches. <!--more--><\/p>\n<ul>\n<li>6 to 7 cups chicken stock<\/li>\n<li>2 cups sweet potatoes, peeled and cut into chunks<\/li>\n<li>2 cups carrots, peeled and cut into 1&#8243; pieces<\/li>\n<li>1 celery stalk, chopped<\/li>\n<li>1 small yellow onion, diced<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<ol>\n<li>Pour the chicken stock into a large sauce pan and bring to a boil.<\/li>\n<li>Add the vegetables and simmer until they&#8217;re fork tender.<\/li>\n<li>Let cool about 20 minutes, and puree in a blender.
