For Father&#8217;s Day, I made this strawberry rhubarb crumb pie with sour cream. The sweet and tart fruit compliment each other, while the sour cream makes a perfect custard type filling in the pie. <!--more--><\/p>\n<ul>\n<li>1 unbaked pie shell<\/li>\n<li>2 cups strawberries, sliced thin<\/li>\n<li>2 1\/2 cups rhubarb, sliced<\/li>\n<li>1 cup granulated sugar<\/li>\n<li>3 tablespoons flour<\/li>\n<li>1\/4 teaspoons salt<\/li>\n<li>1 cup sour cream<\/li>\n<li>2 teaspoons vanilla<\/li>\n<li>2 large eggs<\/li>\n<\/ul>\n<p>Crumb topping:<\/p>\n<ul>\n<li>1 cup flour<\/li>\n<li>1 cup light brown sugar<\/li>\n<li>1\/2 cup butter, room temperature<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 425\u00ba.<\/li>\n<li>In a large bowl, whisk, sugar, flour and salt. Add sour cream, vanilla, and eggs, whisk to combine. Stir in strawberries and rhubarb, put into unbaked crust.<\/li>\n<li>Place on a baking tray and bake at 425\u00ba for 15 minutes. Turn oven down to 350\u00ba and bake for an additional 30 minutes.<\/li>\n<li>While pie is baking, prepare the crumb topping. In a medium bowl mix flour, brown sugar, and butter with a fork until well combined. Remove pie from oven and sprinkle with topping. Return to oven and bake for another 15 minutes.
