Keep a bag of lentils in your pantry, and with a few other staples, you have a delicious protein packed meal that&#8217;s even better the following day! <!--more--><\/p>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>1 small yellow onion, diced<\/li>\n<li>2 carrots, diced<\/li>\n<li>1 stalk celery, diced<\/li>\n<li>3 garlic cloves, minced<\/li>\n<li>1 teaspoon oregano<\/li>\n<li>3\/4 teaspoon kosher salt<\/li>\n<li>1\/2 teaspoon pepper<\/li>\n<li>3 tablespoons tomato paste<\/li>\n<li>4 cups chicken stock<\/li>\n<li>2 cups water<\/li>\n<li>1 russet potato, peeled and diced<\/li>\n<li>1 cup lentils, picked through and rinsed<\/li>\n<\/ul>\n<ol>\n<li>In a large pot over medium high heat, warm olive oil and add the onions, carrots, and celery. Stir frequently for 5 minutes.<\/li>\n<li>Add the garlic, oregano, salt, pepper, and tomato paste &#8211; stirring for 1 to 2 minutes.<\/li>\n<li>Pour in the chicken stock and water, bring to a boil.
