They&#8217;re crispy, melt in your mouth marvels. Finish them off with some red colored sugar, and they&#8217;d be perfect for Valentine&#8217;s Day! <!--more--><\/p>\n<ul>\n<li>1\/2 cup butter, softened<\/li>\n<li>1\/2 cup granulated sugar (plus more to roll the cookies in)<\/li>\n<li>1\/2 cup confectioners sugar<\/li>\n<li>1\/2 cup vegetable oil<\/li>\n<li>1 1\/4 teaspoons vanilla extract<\/li>\n<li>1\/4 teaspoon almond extract<\/li>\n<li>1 large egg<\/li>\n<li>2 1\/3 cups flour<\/li>\n<li>3\/4 teaspoon baking soda<\/li>\n<li>3\/4 teaspoon cream of tartar<\/li>\n<li>1\/2 teaspoon kosher salt<\/li>\n<\/ul>\n<ol>\n<li>With an electric mixer, beat the butter and sugars until light and fluffy, then add the vegetable oil.<\/li>\n<li>Beat in the extracts and the egg.<\/li>\n<li>In a separate bowl, whisk the flour, baking soda, cream of tartar, and salt. Add it to the wet ingredients until just combined. Refrigerate the dough for 30 minutes.<\/li>\n<li>Preheat oven to 350\u00ba. Line a baking sheet with parchment paper.<\/li>\n<li>Measure out 2 teaspoons of dough, roll into a ball and coat with granulated sugar, and place on baking sheet. Flatten the dough with a glass &#8211; I used a potato masher.<\/li>\n<li>Bake for 9 to 12 minutes. After removing cookies from the oven, sprinkle a little more sugar on the warm cookies.
