It&#8217;s ridiculously good for you, and makes amazing leftovers. It&#8217;s even easy enough to whip up on a weeknight! <!--more--><\/p>\n<ul>\n<li><span data-amount=\"2\" data-unit=\"tablespoon\">2 tablespoons<\/span> olive oil<\/li>\n<li><span data-amount=\"1\">1<\/span> medium onion, chopped<\/li>\n<li><span data-amount=\"2\">2<\/span> carrots, sliced<\/li>\n<li><span data-amount=\"2\">2<\/span> celery stalks, chopped<\/li>\n<li><span data-amount=\"3\">3<\/span> cloves garlic, minced<\/li>\n<li><span data-amount=\"1\">1<\/span> &#8211; 14 oz. can crushed tomatoes<\/li>\n<li><span data-amount=\"6\" data-unit=\"cup\">6 cups<\/span> vegetable (or chicken) broth<\/li>\n<li><span data-amount=\"1\">1<\/span> &#8211; 15 oz. can cannellini beans, drained and rinsed<\/li>\n<li><span data-amount=\"1\">1<\/span> &#8211; 15 oz. can kidney beans, drained and rinsed<\/li>\n<li><span data-amount=\"1\" data-unit=\"cup\">1 cup<\/span> ditalini pasta<\/li>\n<li><span data-amount=\"1\">1<\/span> zucchini chopped<\/li>\n<li><span data-amount=\"1\" data-unit=\"cup\">1 cup<\/span> green beans, chopped<\/li>\n<li><span data-amount=\"2\" data-unit=\"cup\">2 cups<\/span> spinach<\/li>\n<li><span data-amount=\"1\" data-unit=\"teaspoon\">1 teaspoon<\/span> Italian seasoning<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<ol>\n<li id=\"instruction-step-1\">Warm the olive oil in a large pot over medium heat. Add onion, carrots, and celery and stirring for 7 to 8 minutes until softened.<\/li>\n<li id=\"instruction-step-2\">Stir in garlic and cook for 1 minute until fragrant. Kept moving around the pot to avoid burning the garlic.<\/li>\n<li id=\"instruction-step-3\">Add in crushed tomatoes and broth. Bring to a simmer and mix well.<\/li>\n<li id=\"instruction-step-4\">Add the cannellini and kidney beans, Italian seasoning, salt, and pepper &#8211; simmering for 15 minutes.<\/li>\n<li id=\"instruction-step-5\">Add zucchini, green beans, and ditalini.
