It&#8217;s moist, filled with juicy blueberries, lemon zest, sour cream, with a brown sugar crumble on top. It&#8217;s a great cake for after dinner, but it also works for brunch! <!--more--><\/p>\n<p><strong>Brown sugar crumble:<\/strong><\/p>\n<ul class=\"wp-block-list\">\n<li>1 cup flour<\/li>\n<li>1\/2 cup light brown sugar, packed<\/li>\n<li>1\/2 cup granulated sugar<\/li>\n<li>1 teaspoon cinnamon<\/li>\n<li>Pinch of kosher salt<\/li>\n<li>1\/2 cup butter, melted<\/li>\n<\/ul>\n<ol class=\"wp-block-list\">\n<li>For the crumble &#8211; in a medium bowl, whisk together the flour, brown sugar, granulated sugar, cinnamon, and salt. Add the melted butter and stir to combine.<\/li>\n<li>Refrigerate the crumble topping while you prepare the cake batter.<\/li>\n<\/ol>\n<p><strong>Blueberry sour cream coffee cake:<\/strong><\/p>\n<ul class=\"wp-block-list\">\n<li>1 1\/2 cups flour<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>1\/4 teaspoon baking soda<\/li>\n<li>1\/2 teaspoon kosher salt<\/li>\n<li>6 tablespoons butter, room temperature<\/li>\n<li>3\/4 cup granulated sugar<\/li>\n<li>1 large egg, room temperature<\/li>\n<li>1\/2 teaspoon vanilla extract<\/li>\n<li>1\/4 teaspoon almond extract<\/li>\n<li>3\/4 cup sour cream, room temperature<\/li>\n<li>2 cups fresh blueberries<\/li>\n<li>Zest of 1 lemon<\/li>\n<li>1 tablespoon cornstarch<\/li>\n<\/ul>\n<ol class=\"wp-block-list\">\n<li>Preheat your oven to 350\u00b0, grease and line the bottom of a 9\u2033 springform pan with parchment paper.<\/li>\n<li>In a medium bowl, whisk together the flour, baking powder, baking soda, and salt &#8211; set aside.<\/li>\n<li>In a large mixing bowl, cream the butter and granulated sugar together with a hand mixer until light and fluffy.<\/li>\n<li>Mix in the egg, vanilla extract, and almond extract, then add the sour cream and mix until smooth.<\/li>\n<li>Preheat your oven to 350\u00b0F (175\u00b0C) and grease and line the bottom of a 9\u2033 springform pan.<\/li>\n<li>In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
