I love a good cheat! She described them as &#8220;<em>birthday cake, cheesecake, and coconut cream pie&#8221;<\/em>\u00a0all rolled into one! Easy to make, and they disappear quickly!<\/span><\/div>\n<p><span id=\"yui_3_2_0_24_1334949329468119\" style=\"font-family: garamond, 'new york', times, serif;\"><br \/>\n<\/span><\/p>\n<p><!--more--><\/p>\n<div id=\"yui_3_2_0_24_133494932946840\">\n<ul id=\"yui_3_2_0_24_133494932946879\">\n<li>1 package (18.25 oz) plain yellow cake mix<\/li>\n<li>1 stick butter, melted<\/li>\n<li id=\"yui_3_2_0_24_1334949329468114\">3 large eggs<\/li>\n<li id=\"yui_3_2_0_24_133494932946899\">1 &#8211; 8 oz. bar of cream cheese, room temperature<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>2 cups confectioners&#8217; sugar, sifted<\/li>\n<li>1\/2 cup sweetened flaked coconut<\/li>\n<li id=\"yui_3_2_0_24_133494932946868\">1\/2 cup walnuts<\/li>\n<\/ul>\n<ol>\n<li>Place a rack in the center of the oven and preheat the oven to 350F. Grease a 9&#215;13-inch pan.<\/li>\n<li>Place the cake mix, butter, and one egg in a large mixing bowl and beat on low speed with an electric mixer until the ingredients are incorporated, about 1 minute. Press the batter into the bottom and partially up the sides of the baking pan and set the pan aside.<\/li>\n<li>Beat cream cheese with an electric mixer on low speed until fluffy, 30 seconds. Add the remaining 2 eggs, the vanilla extract and the confectioners&#8217; sugar and beat on low speed until smooth and combined. Stir in the coconut. Pour mixture over the crust and smooth it out with a spatula. Sprinkle the nuts on top.<\/li>\n<li id=\"yui_3_2_0_24_133494932946892\">Bake the bars until the edges are well browned and the center is firm to the touch, about 40 to 50 minutes.
