I like simple cakes, one pan, no frosting, a little fruit, good with a cup of coffee. This one fits the bill! I think it would be good with chunks of peaches too.<\/p>\n<p style=\"text-align: left;\"><!--more--><\/p>\n<ul>\n<li>1 1\/2 cups pitted cherries (For an easy way to pit cherries go <a href=\"http:\/\/willceau.com\/news\/2012\/07\/10\/cherry-cobbler\/#more-8767\" target=\"_blank\" rel=\"noopener noreferrer\">here!<\/a>)<\/li>\n<li>5 eggs, separated<\/li>\n<li>3\/4 cup plus 2 tablespoons granulated sugar<\/li>\n<li>6 tablespoons butter<\/li>\n<li>1 3\/4 cup flour<\/li>\n<li>1\/2 teaspoon baking powder<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>confectionery sugar<\/li>\n<\/ul>\n<p>1. Preheat oven to 375\u00c2\u00ba. Grease and flour a 9&#8243; cake pan, set aside.<\/p>\n<p>2. Wash and pit\u00c2\u00a0cherries.<\/p>\n<p>3. Separate the eggs, put the yolks and half of the granulated sugar (1\/4 cup plus 3 tablespoons) in a bowl. Beat with an electric mixer for five minutes until it&#8217;s pale and creamy. Melt butter (let it cool slightly) and add to the yolk mixture along with the vanilla.\u00c2\u00a0Sift flour and baking powder, add it to the yolk mixture in batches.<\/p>\n<p>4. Beat eggs whites until stiff, add remaining sugar\u00c2\u00a0(1\/4 cup plus 3 tablespoons). Continue to beat until stiff and fold into egg yolk mixture. Pour batter into pan. Place the cherries over the top of the batter, pushing each one down into the batter with the end of a spoon.<\/p>\n<p>5. Bake 40 to 50 minutes (mine was done in 40). Let cool slightly, and turn out of pan and onto a rack to cool completely.
