These peanut butter cookies are rich, buttery, and loaded with peanut butter flavor. The addition of chopped peanuts adds the perfect amount of crunch,one of my childhood favorites!
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped peanuts
- Preheat oven to 350º. Line 2 baking trays with parchment paper.
- In a small bowl, whisk, flour, baking soda, baking powder, and salt. Set aside.
- In a large bowl, beat the butter, peanut butter, sugar, and brown sugar for 2 to 3 minutes until light and fluffy, then add in the egg and vanilla.
- Add the flour mixture until just combined, and fold in the chopped peanuts.
- Drop by tablespoon onto baking sheet, and flatten slightly using the tines of a fork in a crisscross pattern. Bake for 10 to 12 minutes until golden. Let sit for 5 minutes then transfer to a wire rack to cool. Makes 2 dozen.
