Peanut Butter Cookies

These peanut butter cookies are rich, buttery, and loaded with peanut butter flavor. The addition of chopped peanuts adds the perfect amount of crunch,one of my childhood favorites!

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped peanuts
  1. Preheat oven to 350º. Line 2 baking trays with parchment paper.
  2. In a small bowl, whisk, flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, beat the butter, peanut butter, sugar, and brown sugar for 2 to 3 minutes until light and fluffy, then add in the egg and vanilla.
  4. Add the flour mixture until just combined, and fold in the chopped peanuts.
  5. Drop by tablespoon onto baking sheet, and flatten slightly using the tines of a fork in a crisscross pattern. Bake for 10 to 12 minutes until golden. Let sit for 5 minutes then transfer to a wire rack to cool. Makes 2 dozen.
