Today would have been The King’s 83rd birthday, and since the Boy is a huge fan – we thought we’d celebrate with a little chocolate cake! Sure, I could have made a grilled peanut butter and banana sandwich, or the pound cake Janelle McComb – a childhood friend of Elvis’, baked for him every Christmas. But sometimes a gal feels peckish for just a hunk of, hunk of chocolate cake! Happy birthday Elvis!!!
- 1/2 cup butter, softened
- 1 cup light brown sugar
- 1 egg, room temperature
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 3/4 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon table salt
- Preheat oven to 325º, grease a 9″ x 5″ x 3″ loaf pan.
- In a large bowl, cream the butter and sugar with an electric mixer until light and fluffy. Add the egg, and then the buttermilk and vanilla and beat well.
- In a medium bowl, sift the flour, cocoa powder, baking soda, and salt. Add dry ingredients into wet. Scrape down the sides of the bowl to make sure the ingredients are well blended.
- Pour the batter into the pan, smoothing out the top. Bake for 60 to 70 minutes, testing with a toothpick. Cool in the pan on a wire rack for 15 to 20 minutes, then turn out of pan to finish cooling.
That looks good! Throw a little vanilla ice cream over it, and YUM!
The King would approve!
