At the last minute, I threw this cake together to go with our anniversary dinner. Not much to look at, but it got rave reviews from the fellas. It’s a cheat, you start with a box cake mix, then add cream cheese, eggs, confectioners sugar to make it a layered dessert – very chocolatey, gooey, and delish!
- 2 sticks butter, melted in 2 separate bowls
- 1 package of chocolate cake mix
- 3 large eggs
- 1 – 8 oz. package cream cheese, softened
- 1/4 cup cocoa powder
- 16 oz. confectioners sugar
- 1 teaspoon vanilla extract
- Preheat oven to 350º, spray a 9″ x 13″ pan with cooking spray, set aside.
- Combine the cake mix, 1 egg, and 1 stick melted butter with an electric mixer. Press the mixture into prepared pan.
- In a large bowl with an electric mixer, beat the cream cheese until smooth. Add remaining 2 eggs and cocoa powder.
- Add the confectioners sugar, slowly add the remaining melted butter, then the vanilla.
- Pour over the cake mixture in pan, and bake for 30 to 40 minutes. Let cake cool on a wire rack.
