I always like to add something a bit unusual into my Christmas cookie boxes. These butterscotch blondies are dense, chewy, and rich. A bowl and a wooden spoon are all the equipment you need to mix up this batch of butterscotchy goodness!
- 1/2 cup butter, melted
- 1 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 tablespoon vanilla extract
- 1 cup flour
- 1/4 teaspoon Kosher salt
- 3/4 cup butterscotch chips
- Preheat oven to 350º. Line an 8″ x 8″ baking pan with aluminum foil, and spray with non-stick cooking spray. Set aside.
- In a medium bowl, stir melted butter and brown sugar together. Make sure the mixture isn’t hot, then add the egg and vanilla.
- Mix in the flour and salt, and add the butterscotch chips.
- Pour batter into the pan, smooth out the surface with a spatula. Bake for 20 – 25 minutes, until the top is set, and the edges are pulling away from the sides of the pan.
- Put the pan on a wire rack, and let cool for an hour. Remove from pan and slice into 16 bars.
