Although I’m already married, I like to remind my husband what a lucky guy he is by baking really good cookies to pack in his lunch! (Actually, I’m the lucky one…) Anyway, these cookies are wonderful – they’re packed with oatmeal, dark brown sugar, white and semi-sweet chocolate chips. My project on a cold, snowy weekend!
- 1 cup butter
- 1 1/4 cups dark brown sugar
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 cups flour
- 1 cup old fashioned oats
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 cup white chocolate chips
- 1 cup semi-sweet chocolate chips
- Melt the butter in a medium saucepan over medium-low heat.
- Remove from the heat and stir in both sugars. Transfer mixture to a town and chill for 10 minutes. Take bowl out of refrigerator and whisk in eggs and vanilla.
- In a medium bowl, whisk the flour, oats, baking soda, salt, and cinnamon. Stir in the flour mixture with a spoon, then fold in the white and semi-sweet chocolate chips.
- Chill dough for 30 minutes.
- Line baking pans with parchment. Roll heaping tablespoons of dough into balls and refrigerate for 30 minutes.
- While the dough is chilling, preheat oven to 325º. Bake for 12 to 14 minutes, until the edges just start to turn golden. Cool on a wire rack.
