I bought a ripe basket of pears over the weekend, and decided to use some of them to make muffins. These muffins are made with chunks of pears with a crumb topping, and are a great alternative in the morning to my usual Cheerios!
- 2 cups flour
- 1/2 cup granulated sugar
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup vegetable oil
- 3/4 cup buttermilk*
- 2 teaspoons vanilla extract
- 4 pears, peeled, cored, and chopped
- 1/2 cup light brown sugar
- 1 tablespoon flour
- 2 tablespoons butter, cut into small pieces
- Preheat oven to 350º. Line two muffin tins with 18 baking papers.
- In a large bowl, whisk the flour, sugar, cinnamon, nutmeg, baking powder, baking soda, and salt together.
- Add eggs, oil, buttermilk, and vanilla – stir until well combined. Fold in chopped pears and spoon into baking papers.
- In a small bowl, combine brown sugar, flour and butter – mash with a fork, or your fingers. Sprinkle over batter, and bake for 20 to 25 minutes – testing with a toothpick.
*If you don’t have buttermilk – pour 1 tablespoon of white vinegar into a measuring cup, and fill it with whole milk to the one cup line. Let sit for 15 minutes.
