Peach Blueberry Loaf

Yes, I know I’ve been using this combo for a few posts, but peaches in my area have been subpar and not worth using them in a recipe. I’m so happy that this year peaches are back – sweet and ripe!

  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup granulated sugar
  • 1 stick butter, room temperature
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
  • 1 cup peaches, peeled and cubed
  1. Preheat oven to 350º. Spray a loaf pan with baking spray.In a small bowl, whisk the flour, salt, and baking powder together.
  2. In. large bowl, with an electric mixer, beat butter and sugar together until light na fluffy. Add eggs one at a time. then blend in sour cream and vanilla.
  3. Fold in flour mixture and then fruit. Pour into prepared pan.
  4. Bake for 1 hour and 15 minutes. Remove from pan after 15 minutes and let cool on a wire rack.
