Yes, I know I’ve been using this combo for a few posts, but peaches in my area have been subpar and not worth using them in a recipe. I’m so happy that this year peaches are back – sweet and ripe!
- 2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 cup granulated sugar
- 1 stick butter, room temperature
- 2 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup blueberries
- 1 cup peaches, peeled and cubed
- Preheat oven to 350º. Spray a loaf pan with baking spray.In a small bowl, whisk the flour, salt, and baking powder together.
- In. large bowl, with an electric mixer, beat butter and sugar together until light na fluffy. Add eggs one at a time. then blend in sour cream and vanilla.
- Fold in flour mixture and then fruit. Pour into prepared pan.
- Bake for 1 hour and 15 minutes. Remove from pan after 15 minutes and let cool on a wire rack.
