Cheddar Biscuit Loaf

This bread is a copycat version of a biscuit made popular by a certain chain restaurant named after a scarlet crustacean. I made it out of curiosity to see what all the fuss was about. The texture of the bread is soft, with tangy cheddar, and a kick from the cayenne. It’s delicious right out of the oven, or toasted!

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 cup shredded sharp cheddar
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 large egg
  • 1 tablespoon butter, melted for brushing
  1. Preheat oven to 350º, grease a 9″ x 5″ loaf pan.
  2. In a large bowl, whisk flour, baking powder, sugar, garlic powder, salt, and cayenne pepper. Add shredded cheddar, and toss in flour mixture to coat.
  3. In a small bowl, whisk milk, butter, and egg. Add to flour mixture and mix with a spoon until just combined. Smooth out the top.
  4. Bake for 40 to 45 minutes testing with a toothpick. Brush with 1 tablespoon melted butter. Let cool in the pan for 10 minutes, then remove from pan and let cool on a wire rack.
