This is a quick bread made with yogurt and chocolate chips, it’s simple but delicious. It calls for cake flour, but you can easily make your own with all purpose flour and cornstarch. Another tip – toss the chocolate chips in the flour so they don’t sink to the bottom of the pan while baking.
- 2 cups cake flour*
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- pinch salt
- 1/2 cup mini chocolate chips
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 3/4 cup plain yogurt
- 2 large eggs
- 1 large egg yolk
- 1 teaspoon vanilla extract
- confectioner’s sugar
*To make cake flour, take 1 cup of all purpose flour minus 2 tablespoons of flour, then add 2 tablespoons cornstarch and sift together.
- Preheat oven to 340º, grease a loaf pan and line it with parchment paper.
- In a medium bowl, sift flour, baking powder, baking soda, and salt. Stir in chocolate chips.
- In a large bowl, whisk vegetable oil, sugar, yogurt, eggs, and vanilla. Stir in the flour mixture, being careful not to over mix. Pour into prepared pan and bake for 35 to 40 minutes. Test with a toothpick. Let cool on a wire rack for 15 minutes, then remove from pan. When completely cool, dust with confectioner’s sugar.
