Cocoa Krispie Cookies

I spied some Cocoa Krispies in the cupboard and swapped them out for the Rice Krispies in this cookie recipe. The result was a chocolatey, crunchy cookie, made even better with the addition of mini chocolate chips!

  • 1/2 cup butter, softened
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups Cocoa Krispies
  • 1 cup mini chocolate chips
  1. Preheat oven to 350º. Line a baking sheet with parchment paper.
  2. In a large bowl, beat butter and sugars until light and fluffy. Add the egg and vanilla.
  3. In a separate bowl, whisk the flour, baking soda, and salt. Add to the butter mixture until just incorporated.
  4. Fold the cereal and chocolate chips in with a rubber spatula.
  5. Drop by tablespoons 2″ apart on the baking sheet and bake for 8 to 10 minutes, checking after 8.
  6. Makes 2 1/2 dozen cookies.
