Leftover Halloween Candy Cookie Bars

I carved my pumpkin and set it on our step, many, many bags of candy were purchased. Joe and I sat outside and waited. Four kids – that was it my friends. Growing up, I loved everything about Halloween, making costumes, going out with my friends, and candy! That was back in the days when you got some “fun sized” candy bars, but an equal amount of regular sized bars.

Our street used to be a popular destination. Do kids do “Trunk-or-Treats” and bag going from house to house? So my dilemma was – should I gorge myself with the Kit Kats, M&Ms, Nestle Crunch, and Reese’s cups in front of the TV or bake something fun with them? The latter won out – and they’re pretty good!

  • 1/2 cup butter, room temperature
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup candy bars, chopped
  • 1/2 cup M&Ms
  1. Grease an 8″ x 8″ baking pan, and line with parchment paper. Preheat oven to 325º.
  2. In a large bowl, cream the butter and sugars until creamy – about 2 to 3 minutes.
  3. Beat in the egg and vanilla.
  4. Add the flour, baking soda, and salt until just combined.
  5. Fold in 1 cup of a mixture of candy bars and M&Ms. Evenly press dough into prepared pan. Top with remainder of the candy, gently pressing into the dough. Bake for 30 to 35 minutes, testing with a toothpick.
