Waffle BLT with Avocado

Thomas’ Bagel Thins are my son’s go to bread for BLTs, except that we ran out. We were also out of bread. * hangs head in shame * However, there was leftover waffle batter in the fridge, so I fired up the waffle iron and made waffle BLTS! 

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/2 cup milk
  • 2 tablespoons vegetable oil
  • 1 tablespoon chopped fresh basil
  • mayonnaise
  • cooked bacon
  • shredded iceberg lettuce
  • sliced tomatoes
  • sliced avocado

1. Preheat waffle iron.

2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside. In a large bowl, whisk the eggs, milk, oil, and basil. Add the dry ingredients and mix until just combined – don’t over mix it!

3. Grease hot waffle iron with oil. Pour batter on the iron (consult your manual as to the amount, as waffle irons vary in size), close lid and cook until the waffles are golden brown and crisp.

4. Spread waffles with mayonnaise and pile on the bacon, lettuce, tomato, and avocado.
