There were three spotted, overripe bananas in the fruit bowl begging to be a banana bread. I wanted to try something different, so I substituted peanut butter for some of the oil, and added chocolate chips. Because chocolate chips make everything taste better.
- 3 ripe bananas, mashed
- 1/2 cup peanut butter
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1 1/2 cups flour
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1/ teaspoon salt
- 1 cup chocolate chips
- Preheat oven to 350º and grease an 8″ x 4″ loaf pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a large bowl, stir the bananas, peanut butter, oil, egg, and sugars. Add the dry ingredients and mix until just combined.
- Poor into prepared pan and bake for 60 minutes, testing with a toothpick.
- Let cool on wire rack for 15 minutes, turn out the bread from the pan, and continue to cool.
Never thought of ‘that’ as bread… 🙂
Not bread you’d put salami and cheese on, but a bread to have with your coffee in the morning.
