Coffee Cookies

These cookies, paired with a cup of coffee on a cold afternoon is pure bliss! They’re easy to put together, and make a great gift. Because who doesn’t love a chocolate dipped, espresso flavored cookie?

  • 1 cup flour
  • 1/4 teaspoon baking powder
  • 1 tablespoon espresso powder (or instant coffee), dissolved in 1 tablespoon hot water
  • 6 tablespoons butter, softened
  • 1/4 cup confectioners sugar
  • 1/4 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  •  1 teaspoon Crisco or corn syrup
  1. Preheat oven to 320º, line a baking sheet with parchment paper.
  2. In a medium bowl, sift flour and baking powder.
  3. In a small bowl, dissolve espresso powder in hot water.
  4. In a large bowl, cream butter and confectioners sugar until light and fluffy, then add espresso and vanilla. Mix in flour until combined.
  5. Scoop out heaping 1/2 tablespoons of dough, roll into balls, and flatten with the tines of a fork. Bake for 13 to 15 minutes, let cool on a wire rack.
  6. In a small bowl, combine the chocolate chips and Crisco, microwaving in 30 second increments, stirring after each round until the chocolate is melted.
  7. Dip cookies in melted chocolate, and place on a wax paper lined baking sheet to firm up. Makes 20 to 25 cookies.
