Marbled Banana Bread

What else is there to do on a freezing cold Sunday but laundry and baking a bread that uses up the overripe bananas in the fruit bowl? Yep, always nice to have a good snack to go with an afternoon of movies and a cat who shuns your lap in favor of a warm radiator!

  • 3 ripe bananas
  • 1/2 cup butter, melted
  • 1 large egg
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon table salt
  • 1 cup flour + 1/4 cup – divided
  • 1/2 teaspoon cinnamon
  • 1/4 cup cocoa powder
  • 3/4 cup chocolate chips
  1. Preheat oven to 350º, grease a 9″ x 5″ loaf pan, set aside.
  2. In a large bowl, melt butter and mash bananas. Whisk in egg, light brown sugar, vanilla, baking soda, and salt.
  3. Stir in 1 cup of flour until well combined. Divide batter in two bowls. In one bowl, add the additional 1/4 cup of flour and cinnamon. In the other, add the cocoa powder and chocolate chips.
  4. Drop large dollops of batter in prepared pan – banana, chocolate, and banana. On top of that, chocolate, banana, and chocolate. Using a butter knife make two figure eights in the batter.
  5. Bake for 55 to 65 minutes, testing with a toothpick. Lets cool in pan for 15 minutes, then turn out on a wire rack.
