Cherry Chocolate Chip Muffins

These muffins get the fellas’ stamp of approval. How can you go wrong with a muffin that has chopped up cherries and mini chocolate chips?

  • 2 cups flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/2 cup buttermilk*
  • 1 1/2 cups cherries, pitted and quartered
  • 1 cup mini chocolate chips
  1. Preheat oven to 375º. In a medium bowl, whisk flour, baking powder, and salt.
  2. In a large bowl, cream butter and sugar. Add eggs one at a time and vanilla.
  3. Alternate buttermilk and flour mixture in batches. Fold in the cherries and chocolate chips.
  4. Line muffin pans with 16 baking papers, and drop 2 heaping tablespoons of batter in each cup. Bake for 15 to 20 minutes, testing with a toothpick.
