Anise Cookies

It’s that time of year, and I’ve been experimenting with some new cookies to add to my old favorites. Bake a couple to test, and freeze the rest of the dough for a future baking session!

For the cookies:

  • 3 cups flour
  • 3 teaspoons baking powder
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon anise extract

For the icing:

  • 1 cup confectioners sugar
  • 1 teaspoon anise extract
  • 2 tablespoons milk
  • nonpareils
  1. Preheat oven to 350º, line a baking sheet with parchment paper.
  2. In the bowl of a stand mixer, add the flour, baking powder, sugar, eggs, butter, and anise extract. Using the paddle attachment, slowly blend the ingredients into a soft dough.
  3. Drop 1 tablespoon of dough onto the parchment, spacing them about 2″ apart. Bake for 10 minutes, until the bottoms of the cookie are light brown. After 5 minutes, remove them from the pan and place on a wire rack to cool completely.
  4. In a small bowl, whisk the confectioners sugar, anise extract, and milk. Dip 3 or 4 cookies at a time in the icing, placing them back on the baking rack, and sprinkle with nonpareils.
