It’s that time of year, and I’ve been experimenting with some new cookies to add to my old favorites. Bake a couple to test, and freeze the rest of the dough for a future baking session!
For the cookies:
- 3 cups flour
- 3 teaspoons baking powder
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 cup butter, melted
- 1 teaspoon anise extract
For the icing:
- 1 cup confectioners sugar
- 1 teaspoon anise extract
- 2 tablespoons milk
- nonpareils
- Preheat oven to 350º, line a baking sheet with parchment paper.
- In the bowl of a stand mixer, add the flour, baking powder, sugar, eggs, butter, and anise extract. Using the paddle attachment, slowly blend the ingredients into a soft dough.
- Drop 1 tablespoon of dough onto the parchment, spacing them about 2″ apart. Bake for 10 minutes, until the bottoms of the cookie are light brown. After 5 minutes, remove them from the pan and place on a wire rack to cool completely.
- In a small bowl, whisk the confectioners sugar, anise extract, and milk. Dip 3 or 4 cookies at a time in the icing, placing them back on the baking rack, and sprinkle with nonpareils.
