Another cookie to add to my cookie tray – there’s something wonderful about the combination of orange and chocolate, and these do not disappoint!
- 12 tablespoons butter, softened
- 2/3 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups + 2 tablespoons flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- zest of 1 medium naval orange
- 2 tablespoons fresh squeezed orange juice
- 1/2 cup chopped walnuts
- 8 oz. chocolate
- 1 tablespoon vegetable shortening
- In a large bowl on medium speed, beat butter until smooth. Add brown sugar and beat until fluffy.
- Beat in egg and vanilla on high speed until well combined.
- In a smaller bowl, whisk flour, cinnamon, and salt. Add to the wet ingredients in batches on low speed. Switch to high speed and add the zest, juice, and walnuts.
- Divide the dough in half and roll into 2 – 8″ logs, wrap in plastic wrap and chill in the fridge for at least 4 hours.
- Preheat oven to 350º, line 2 baking trays with parchment paper. Slice each log into 12 cookies and place on baking sheets 2″ apart. Bake for 12 to 14 minutes until light brown around the edges. Cool on a wire rack.
- Melt chocolate and shortening in a double boiler or in a microwave in 15 second increments, stirring after each time until smooth. Dip cookies in chocolate and place on a parchment lined baking sheet. Place pan in the refrigerator to help the chocolate set. Makes 24 cookies.
