Chocolate Cream Cheese Frosting

It was The Boy’s birthday last week, and I had grand plans for his cake. A coconut cake with caramelized fresh pineapple filling, and a frosting made with coconut milk. The Boy turned it over in his head for a few days, and asked if he could have a chocolate cake with chocolate frosting instead. Done! I baked his favorite chocolate cake with sour cream and made a chocolate cream cheese frosting. I had never made the frosting before, and it was amazing!

  • 2 – 8oz. bars of cream cheese, softened
  • 2 sticks of butter, softened
  • 2 teaspoons vanilla extract
  • 2 cups confectioners sugar
  • 2/3 cup cocoa powder
  • 2 tablespoons milk
  1. In a large bowl, cream the cream cheese and butter together until well incorporated. Add the vanilla.
  2. Sift the confectioners sugar and cocoa powder together and add a half cup at a time to the cream cheese/butter mixture. Add the milk to loosen up the frosting. Makes enough to frost a 9″ cake.
