Orange Muffins

While these orange muffins look rather plain, they are brushed with an orange glaze that seeps into the muffins and makes them extra delicious! They’re wonderful with morning coffee or as a snack.

  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 tablespoons sour cream
  • 2 large eggs
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup buttermilk
  • 1 tablespoon orange zest
  1. Preheat oven to 400º.
  2. Cream sugar and butter add sour cream, and eggs one at a time. Add the orange zest.
  3. In a separate bowl, whisk flour, baking soda, and salt. Add to butter mixture on low speed, then add buttermilk.
  4. Fill muffin papers 2/3 full and bake for 12 to 14 minutes.

Glaze:

  • 1/3 cup granulated sugar
  • 1/4 cup freshly squeezed orange juice.
  1. In a sauce pan oven medium heat whisk the sugar and juice until the sugar is dissolved. Brush on the warm muffins. Makes 15.
