

An easy cake – blend a whole orange in a blender, add sugar, eggs and butter. Then pour in a bowl and add flour, baking powder, baking soda, and salt. Bake and you have a lovely cake. If you like, you can top it off with a glaze.
- 1 large navel orange with peel, cut into eighths
- 1/2 cup butter, melted and cooled slightly
- 2 large eggs
- 1 cup granulated sugar
- 1 3/4 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup confectioners sugar
- 1 1/2 tablespoons fresh squeezed orange juice
- 1 teaspoon orange zest
- Preheat oven to 350º and grease a 9″ x 5″ loaf pan and line with parchment paper.
- Toss the sliced orange in a blender and process until it’s broken down until smooth.
- Add the butter, eggs and, sugar and process until well combined.
- In a small bowl, whisk flour, baking powder, baking soda, and salt.
- Pour the wet ingredients into a large sized bowl then add the flour mixture until well combined.
- Pour into prepared pan and bake for 45 to 50 minutes. Test with a toothpick.
- Let cool for 15 minutes, then let cool on a wire rack.
- In a small bowl, whisk confectioners sugar, orange juice, and orange zest and drizzle it over the top of the cake.
