Greek Yogurt Coffee Cake

This is a terrific snacking cake, a simple, moist cake, studded with mini chocolate chips, and a light glaze on top. Great with your morning coffee or a lunchbox snack.

  • 1 cup Greek yogurt
  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1/2 cup confectioners sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 tablespoon water
  1. Grease a 9″ x 13″ pan, preheat oven to 350º.
  2. In a large bowl, beat yogurt, sugar, and butter until smooth. Add eggs and vanilla.
  3. In a small bowl, whisk the flour, baking powder, baking soda, and salt. Add to the wet ingredients until just combined. Stir in the chocolate chips.
  4. Pour batter into prepared pan, smooth outage top with a rubber spatula, and bake for 30 to 35 minutes. Let cook on a wire rack.
  5. Whisk the confectioners sugar, vanilla, and water in a measuring cup with a spout. Drizzle glaze over cooled cake.
