

This is a terrific snacking cake, a simple, moist cake, studded with mini chocolate chips, and a light glaze on top. Great with your morning coffee or a lunchbox snack.
- 1 cup Greek yogurt
- 1 cup granulated sugar
- 1/2 cup butter, softened
- 2 large eggs, room temperature
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup mini chocolate chips
- 1/2 cup confectioners sugar
- 1/2 tablespoon vanilla extract
- 1/2 tablespoon water
- Grease a 9″ x 13″ pan, preheat oven to 350º.
- In a large bowl, beat yogurt, sugar, and butter until smooth. Add eggs and vanilla.
- In a small bowl, whisk the flour, baking powder, baking soda, and salt. Add to the wet ingredients until just combined. Stir in the chocolate chips.
- Pour batter into prepared pan, smooth outage top with a rubber spatula, and bake for 30 to 35 minutes. Let cook on a wire rack.
- Whisk the confectioners sugar, vanilla, and water in a measuring cup with a spout. Drizzle glaze over cooled cake.
