Gooey Butter Cake

This is an easy, classic cake from the 1960’s. I refer to it as a Mid-Century Modern cake being that it lacks embellishment. It’s a buttery, cake crust that’s topped with a rich cream cheese layer – kind of a potluck cheesecake!

  • 1 – 15.25 oz. Duncan Hines yellow cake mix
  • 1/2 cup butter, melted and cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 – 8 oz. cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups confectioners sugar
  1. Preheat oven to 350º. Grease a 9″ x 13″ pan.
  2. In a large bowl, beat the cake mix, butter, 2 eggs, and vanilla. Press evenly into prepared pan.
  3. In a separate bowl beat the cream cheese and remaining eggs until smooth. Add the vanilla and confectioners sugar until well blended. Pour over cake batter and spread evenly with a spatula. Bake for 40 to 45 minutes. Let cake cool completely before serving.
