Vanilla, chocolate and strawberry all in one cupcake!
What you need – one 19.5 ounce box of brownie mix and one 18.25 ounce box of strawberry cake mix. Follow the directions on the packages. Scoop some of the brownie mix into the cupcake paper, filling it approximately a third full. Do the same with the strawberry cake batter, and pop into a 350º oven. Bake for 20 minutes, and test with a toothpick.
While the cupcakes are baking, make the icing. I made this simple cream cheese frosting.
- 8 ounces cream cheese, softened
- 1 stick better, room temperature
- 1 – 1 1/2 cups confectionary sugar
- 1 teaspoon vanilla
Combine the cream cheese and butter until well blended. Add vanilla and confectionary sugar. Frost when cupcakes are cool.
