Busy weekend, however I did manage to bake some cookies that Joe says are amazing! Soft, light, lemony – there’s something about citrus that makes me pine for warmer temperatures – we’ll get there.
- 2 1/4 cups flour
- 2 teaspoons baking powder
- 8 ounces cream cheese
- 1 stick butter, softened
- 1 1/2 cups granulated sugar
- 1 tablespoons lemon zest
- 1 1/2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon kosher salt
- 1 large egg + 1 large egg yolk
- 1 cup confectioners sugar
- Preheat oven to 325º, line a baking tray with parchment paper.
- In a small bowl, whisk flour and baking powder together, set aside.
- In a large bowl, beat the cream cheese, butter, and sugar until light and fluffy.
- Add lemon zest, juice, vanilla, salt, and eggs – then mix in flour until well combined,
- Wrap dough in plastic and chill for an hour. Measure out 1 tablespoon of dough, roll into a ball, and roll into confectioners sugar. Place 2″ apart on baking sheet and bake for 15 minutes, Cool on wire rack. Makes 3 dozen cookies.
