These are more like bars than a cake, they’re dense and chewy. Almost like an apple blondie, they’re sturdy – perfect for packing in a lunch box.
- 1/4 cup butter, melted
- 1/2 cup light brown sugar
- 1/2 granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 cup flour, sifted
- 1 Granny Smith apple, diced
- 1 tablespoon granulated sugar
- 1 tablespoon cinnamon
- Preheat oven to 350º. Grease an 8″ x 8″ baking dish and set aside.
- In a large bowl, mix together butter, and both sugars. Add egg, vanilla, and cinnamon.
- Add flour and stir until combined, then fold in diced apples – mixture will be thick.
- Spread mixture evenly into pan.
- In a small bowl, mix sugar and cinnamon and sprinkle on top of the batter.
- Bake for 40 to 45 minutes until firm. Let cool, and slice into bars.
