Hermits are a classic New England treat – I grew up eating these in bar form, but this cookie version is just as good. Hermits are soft, spicy, studded with raisins, and delicious!
- 1 stick butter
- 1 1/2 cups light brown sugar
- 2 tablespoons milk
- 2 large eggs
- 2 cups flour
- 1 teaspoon baking soda
- 1 cup raisins
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/8 teaspoon kosher salt
- Preheat oven to 350º and line two baking pans with parchment paper.
- In the bowl of an electric mixer, cream butter and sugar until light and fluffy. Add the eggs, one at a time, then the milk.
- In a separate bowl, combine the flour, baking soda, raisins, cinnamon, nutmeg, and salt. Add flour mixture to the wet ingredients in three batches, and mix until well combined.
- Drop by tablespoon on to baking sheet, leaving 2″ between each cookie for spreading. Bake for 13 to 15 minutes. Cool on a wire rack. Makes 3 dozen cookies.
